The Crosby December Menu
Our good friends over at the Crosby in downtown Santa Ana have been busy working on their new Chef’s Menu for December, and it looks and tastes phenomenal! If you frequent that stomping ground and are tired of eating sweet potato fries every time you go- ask for the Black Book. I took the opportunity to shoot all of their plates so they can archive their experimental edibles, because next month it’s going to be all new.
Here’s what the December menu has to offer…
FRUIT CAKE PATE EN TERRINE

Cognac soaked walnuts, dried cranberries, tarragon, pistachio dust, ube mustard, toasted baguette and cornichons
BEEF TONGUE

Honey ginger shoyu glaze, pickled golden beets, asian pear, sesame green onion relish, chinese bun

CRABCAKE MICRO HERB SALAD

Rainbow micro herb mix, caper crabcake, homemade croutons, cilantro chive sour cream, orange liquor duck fat vinaigrette
FILET MIGNON

Herb tomato confit, caramelized endives, horseradish cream cheese, marsala reduction
TUNA COLLAR

Kochu chang butter sauce, shiso chili verde, lemon grass pickled watermelon rind, jalapeno dust
RACK OF LAMB

Molasses glaze, roesemary and smoked sea salt seasoning, buckwheat polenta, pan roasted asparagus, candied chorizo, apple relish
